Quick & Easy Homemade Healthy Mayonnaise

We are having a party tomorrow and I needed some mayo for the macaroni salad and potato salads. If you ever picked up a jar at the store, you would quickly realize how UN-healthy it was. Besides, why buy, what you can make right? :o)~

Homemade Healthy Mayonnaise

Time:8 minutes

4 egg yolks
1 teaspoon Dijon mustard
1/4 teaspoon cayenne pepper (optional)
1 tablespoon of fresh lemon juice OR Vinegar. Which ever you happen to have at the time.
2 cups canola OR olive oil
Dash of salt to taste

Food processor (or your Kitchen Aid)

Combine the egg yolks, mustard, cayenne(optional) and lemon juice in.  Start to process, then add the oil in a thin stream through the top. The mayonnaise will come together and thicken all of a sudden.

If the mixture is too thick, add a little warm water to thin it. Add salt or pepper to taste. The mayonnaise will keep for about 1 week in the refrigerator. Enjoy!!
