Blueberry Muffins

The kids felt like blueberry muffins today.

 So here they are. 

Jumbo ones!

I didn’t follow an actual recipe.

3 cups of SR flour

1/2 cup of quick oats

1.5 cup of sugar

1/2 cup canola oil 

1 cup of almond milk

2 large eggs

2 cups of frozen blueberries

2T homemade almond extract
I baked them on 375 for 18 minutes.

It made a dozen jumbos.

They were very moist with s nice spongey crumb. The kids devoured them!
