Homemade Cold Stone ice-cream

We went to Cold Stone Creamery for date night a few weeks ago. Two sundaes, $14!
I came home and googled homemade Cold Stone Creamery icecream,  which took me straight to YouTube.
As long as you have a Pampered Chef stoneware, or some other type of stoneware, you can make this too. 
I used my Pampered Chef cookie sheet.

I placed it in the freezer for ten minutes, then took it out and placed a healthy scoop of ice cream on it. Then I added some fixings. 

For mine I added a few vanilla wafers and a banana. 

Then using my Papered Chef slicer  I began to cut the wafers and banana into the ice cream. 

Just a few minutes later….wa’la!

Cost: .50 per serving.


I made the kids some chocolate,peanut butter, marshmallow, cookie ones.

It looked like this after it was mixed.

I made dh’s a ‘little bit of everything’  

Homestyle Vanilla Ice cream, gram crackers, Carmel, walnuts, and fudge. Mmm!

The key is to have the stoneware be very cold. 

This was a much cheaper option then having icecream sundaes out. It was also a lot of fun to make. 

I definitely will be making these again. 

Maybe once a month for movie night. 😉

Another hike happened…

Today was a beautiful day. I’ve been trying to be outside more…since giving up electronics; for the most part.

My day started off with this energy packed junk food. 😉

We stopped at Whole Goods for reverse osmosis water..Which we did stock up on…

But while in line I saw this key lime pie in a cup thing. The ingredients sounded very nice, and just like that, I was sold. 

 It was only $2.99 Who could resist? Not I. 😉

The cold brew coffees were on sale for $1.58, so I got one for my daughter and one for myself.



Then off we went! 

The hike was mostly going up and down some rather steep stoned steps. But then we reached the view…..

Gods Creation is so exhilarating!

Beautiful waterfalls never get boring to me. They are just so tranquil; that your mind  gets lost. I love that!

Once we reached our destination, it was just completely chill. The water felt great! 

Off she went!

The pool part was about three feet deep. 

It was just so pretty!

They had so much fun. ❤️

Can’t you just feel it? 

It was a hot one today. 
On the way back I took some amazing pictures of some mushrooms. Along with some candid views.

I am still wonder if any of the mushrooms were edible. I will have to check a book out at the library next week on mushrooms. 👍

Or…maybe they were all hallucinogens?!

Either way, they sure were pretty to look at.

To me, this one looked the most like something you would eat. Of course I am probably wrong. It reminded me of the kind of mushrooms that taste like a steak. The name has escaped me at the moment.😐



And that concluded our daily venture. 

We got home to watch the sun set…..

Hiking for Exercise

~Why hiking is the best form of exercise

I’ve had a gym membership for the past five years. And despite avidly going, I haven’t lost much weight.

I think it’s because when I get tired I stop and go home. It’s that easy! 
I have found that hiking is just about the best form of exercising you can get. 

A full body one at that!
You see, you have to keep going…even if you become exhausted and tired…
You can’t just stop and go home when you’re tired. 

What if you are up on top of a mountain?!
Maybe you tell yourself that a four mile hike is ‘child’s play’
And perhaps it is, if it’s all down hill….
But then you need to get back up the path…
If you are not an experienced hiker, which I am not… You will want to quit and go home.
But….. That simply will not be an option.
Especially if it is getting dark outside and starting to rain. 
Walking on a treadmill at the gym gets boring quick. Even when listening to Brittany or Jay-Z. 😉
It’s just boring….
But hiking is never boring. 
Also, at least for me personally, I simply can’t spend time “thinking” while out on a hike. 

If YOU can, great! But I can not.
My mind is too busy watching where I’m stepping and keeping an eye for wildlife.

Its very sedating. Mentally.
And for those reasons alone, I have come to appreciate the mental outlet of hiking for exercise.

Hiking for Fitness

~Hiking is the best form of exercise~

Key Lime Meringue Pie

keylimepie2Darn Walmart! Darn Walmart!

I ran in tonight to get the kids some ‘fun food’ for tomorrow, seeing as I have another doctors appointment tomorrow moring at 10:30am, therefore I have to go into work with DH once more….*sigh*

I left Walmart with  a Key Lime Meringue pie!!

 

I was not planning on buying a pie but when I went over to the yogurt section the ‘day old cart’ was packed to the brim with all sorts of pies. All marked down to $2.99 each. Grr!

I also picked up two 4-packs of chocolate chip muffins for $2.09 each.

I don’t care for chcolate chips, but the kids do. And DH always likes a little something to go with his coffee. Which will be Starbucks tomorrow! And better to bring a .50 muffin, then to pay $2 for one of theirs!

But that’s not all! I also picked up six loaves of Italian bread that was marked down to $1.18 each. I have tried every single grocery store bakeries Italian bread, and as shocking as it sounds..I LOVE Walmarts the best! Next to my own of course.  I think they must add extra Gluten in it because it never crumbles the way other grocery store bakery bread does. And that is a pet peeve of mine. I can’t stand crumbly bread…That is reserved for corn bread ONLY!

So now the kids can make a big grinder tomorrow, and I freezed the rest to make garlic bread or french bread pizzas for quick ‘fun lunches’  next week.

Soooo—while I did pick up the burritos and popcorn that the kids wanted…. 

I got myself a pie. No one really cares for Key Lime but me!

Key Lime has always been a favorite, right next to pecan, but I don’t happen to have a torch here at home for the top. And I have yet to master whipping the egg whites just so…

So here it is, nearly midnight. I need to wake at 5am with DH..and I am eating PIE!

Socks

 

I have five kids at home, four girls and one boy. Yesterday we were getting ready to leave in a hurry, when my daughters came to me and complained that they have no socks to wear. Hm, I started thinking about how I cleaned my two youngest daughters dresser out a few months ago and matched up all 17 pairs of their socks. I asked them both if they looked in their third drawer.

They replied, Yes, it’s empty. WHAT? Empty?  Where did they go?

 All the laundry was clean, and up until now weather hasn’t warrented socks.

Where did the socks go? They didn’t know! Neither did I.

 SO they did the only logical thing, in their own minds, that is……THEY ran to their brothers room and borrowed a pair of his.

 

My two oldest daughters asked  if I had any socks they can borrow? I told them that I only have two pairs of socks to my name, and whenever I have lent socks out in the past, I’ve never gotten them back, so the answer would be NO!

I then thought of the thirty dollars I spent LAST Christmas on pretty socks for each of them. I asked them both what happened to their socks. They both replied in unison, “that was LAST Christmas mom!” I say, “yeah?” One of the two pairs of socks that I have I recieved as a Birthday gift when I was sixteen!! So?

What is it with kids socks?

I know having five kids, which means lots of sock to keep track of….but how do they get lost? The house is not that big!  They are not bringing their socks anywhere and leaving them behind!

Where exactly are all these socks going?

 Behind the washer and dryer? Checked! Nope!

I told them that they needed to go find some socks ASAP, or we wern’t leaving the house.

So they also did the only logical thing, they went to their brothers room..

Thankfully, he has big feet!

 

The 5 Love Languages

 

I am sure every one has read this book at one time or another. I was talking about it recently with dh and a friend, which led me to writing this post. I think it is very  important for us to know what our spouses, friends, and children’s love languages are. It really is helpful in a relationship to know.

For example: If a friend who is going through a hard time, who’s love language is, Words of Affirmation, and I send a gift, the gift can be real nice, but really is not going to do much for the friend.

Same goes for a friend who’s love language is Receiving Gifts.

If I try to console them with a hug, or offer to clean their house, these things may be sweet gestures, but will not actually be helpful for the  friend in need.

What are the 5 Love languages?
1.Words of Affirmation-
Actions don’t always speak louder than words. If this is your love language, unsolicited compliments mean the world to you. Hearing the words, “I love you,” are important.

2.Quality Time-
In the vernacular of Quality Time, nothing says, “I love you,” like full, undivided attention.

3.Receiving Gifts-
Don’t mistake this love language for materialism; the receiver of gifts thrives on the love, thoughtfulness, and effort behind the gift.

4.Acts of Service-
Can vacuuming the floors really be an expression of love? Absolutely! Anything you do to ease the burden of responsibilities weighing on an “Acts of Service” person will speak volumes.

5.Physical Touch-
This language isn’t all about the bedroom. A person whose primary language is Physical Touch is, not surprisingly, very touchy.

I went ahead and took the online quiz.  Because no one knows what their love language is, better then themselves.

I took a guess before I even took the quiz. And I was right on!

That said,

I think it is equally important to know what “other peoples” love languages are. Especially those close to you. ❤️

For example:

My mother NEEDS me to remember every single holiday. A gift, and a  card, show her I love her, and am thinking about her. If I forget even once, she feels regected. She also needs Words of Affirmation occasionally.  Therefore, she falls under #1, but mostly #3.

My father NEEDS me to tell him how important & fearless he is to me, and how much I admire him. He is not afraid of anything! And likes for me to remember that!

Which I do. He falls under #1 all the way!

At times, I still like to send him a gift, as I do my mother, but it is usually not very important to him.
I have come to realize in relationships in general,  If you are not getting the love language that you so desire, it is often times hard to give your friends and family the love languages that they  really need. It falls under mis-communication I suppose. Or maybe the whole, men are from mars, women are from venus.

Regardless.. The ultimate key is, Be Sincere! :o)

Freedom to Choose

While vaccines may have had their place years ago when sanitation and overall hygiene were issues, many of these ‘so called’ life threatening childhood illnesses have ceased.

But not solely because vaccines were developed, but living conditions improved. We never mention how much living conditions have improved.

I am of the generation that had measles, mumps, and the pox. Just to name a few.

These were considered normal childhood illnesses. Not life threatening diseases. As they are today. Interesting to think upon.

Personally, I am in the mind frame for building healthy immune systems from day one.

Not injecting numerous vaccines, along with foreign substances into otherwise, healthy, happy newborns; from day one.

I have issues with doctors telling me that side effects are slim to non, and not to be ‘one of those parents’

Yet, these very doctors, make me sign a form stating that if my child has a side effect that proves lethal, or takes their life, they will NOT be held responsible. As I’m complying with this by signing a form.

I am signing a paper that states if my child dies, or inquires a side effect that ends their life, then the doctor/practice, will NOT be held responsible.

I’m sorry, but I am not willing to gamble with my child’s life ever again.(more on that later)

For all the hype that parents have given me throughout the years, insisting that my child is a walking time bomb, because he/she has not been vaccinated, proves little faith in their child who HAS been vaccinated. I think that’s worth noting.

My child is NOT carrying any virus, where live vaccines are concerned, if anything, it is the other way around. You just lowered your healthy child’s immune system by injecting it with a live/weakened virus! One that needs to, oftentimes be repeated through out the years. Until age 12.

Yet, most are never concerned about any side effects. Well, until their child almost dies.

That is when my blinders came off.

People perish for lack of knowledge, or so its written. Why not investigate who is exactly benefiting from mass market vaccines. If nothing else.

It may surprise you.

In the very least, open your mind.

Not everyone has your child at best interest.

My children will not be a gueni pigs in mast market herd vaccinations. It is MY choice to refuse this CHOICE.

Much like it is YOUR choice for an abortion. Not to open that Pandora’s box. But to make a point.

We live in a society that insists on freedom to choose.

I will respect your freedom TO CHOOSE, but I will demand the same curiosity.

In conclusion, I have had my daughter almost die after getting a combined DTaP vaccine.

Back in the days I was a ‘no questions asked’ sorta person. I went along with what everyone else did. I did not think I had a voice or choice.

So when it came time for my daughter to have her next round of shots, I signed a paper stating, that if anything were to happen to her, it would release my doctor of any lawsuits.

Within six hours of getting her COMBO shot, she had a fever, which I was told would be normal.

After all, Fever is our body’s natural immune response to infection, diseases, etc.

So as the doctor instructed, I gave my daughter some Tylenol and went to bed.

I woke up to hear my baby crying and vomiting in her crib. She could not be comforted.

She was also breaking out with a rash all over her body. Something was definitely not right.

I took her to the ER, where they told me that it ‘could’ have been a side effect from the vaccines, but who could say.

Long story short. She was in the hospital for two weeks hooked up to feeding tubes because of her side effects. She was also having trouble breathing on her own.

It was a sight that no mother should have to see.

And they could not tell me whether it WAS, or WASN’T a side effect to an otherwise healthy baby.

But one thing is certain, she was never the same since that day. Something terribly wrong happen to her immune system.

And as a mother, I can not ever forget that I almost lost my precious baby.

Call it as you may, but herd immunity is nothing more than an antiquated theory, and not something that is actually protecting our kids form deadly infections. It’s not.

Herd immunity Definition:

Herd immunity is said to serve as a human shield. A type of immunity – for “at-risk” individuals. But remember, it’s only a hypothesis.

Food for thought:

Just as hand washing has saved millions from infant mortality in hospital settings, healthy habits minimize exposure and boost our natural defenses. It IS a fact!

The science supporting this won the Nobel Prize in 2011! Check it out!

Part 4 or 5 –Southern Living

When we finally got in to look at our current home…we loved the open floor plan. It had a bonus room in the back that was not mentioned online and I thought it would be a great place for mom to live. The only thing was it did not have a closet. It only a built in book case. Later I ended up going to Home Depot and bought her  one that I put together in 30 minuets flat. I am not so sure mom liked it, in fact she expressed that she didn’t but we couldn’t afford a wooden one and with the low  ceilings it probably wouldn’t have fit anyways. Her cats loved sleeping in it though and that was the most important thing!

 

The extra room didn’t have any doors but there was a man at the church we were attending at the time offered to charge us for materials and put some French doors up for a bit over a hundred dollars.

 

Given I had never lived in a double wide.. I had no idea that the walls are not solid concrete and that the laminate floors were not real wood. I was clueless on so many levels.:o/

 

I did not like the small closets because we had large ones back home, but it was a small price to pay for all the extras that we would have.

 

We did not even sleep on it..We made an offer and then the agent told us he was sure that we would get it because no one ever moves to this area and the place had been on the market for 2 years already. The owner had moved out of state  back then. He said that if we offered 10 grand less then the asking price..he felt we would get it.

 

The offer was accepted and we got it and moved in September of 2005. The problem was we had already paid a 6 month lease on the apartment that we were in and prayed that we would get the funds back. They told us that they needed to keep one month but would refund us the other 2 months. It took a few months but we did end up getting it back..PRAISE GOD!

 

In October, DH drove down to Florida and got a U-haul to pull back for all moms stuff and she moved in with us for 3 months. She hated it here. She felt isolated and in her line of work they only pay $2.10 an hour. There was also no state assistance for her. Her job had no benefits and making such little money there was no way she would be able to afford insurance on her own. She was already diabetic and had high blood pressure so needed meds sooner rather then later. Evidently in the state of North Carolina you had to have a disability, not speak the language, or be over 62 to qualify for state help.

 

My MIL had no problems moving here and qualifying because she does not speak the language. This really irritated my mom, so along with much drama….she moved back to Florida the week after Christmas that very same year.

 

Months passed, and I made her room into the school room but since then made it into a nursery, and the school room is back where it started. Things did start getting to me about living here in the country. For one..no one comes to visit and back home in the subdivision that we lived, the majority of the neighbors were my church friends and it was really easy for them to swing by for coffee or tea. I  also use to throw dinner parties all the time and down here I only heard the reply..(If you were closer dear….I’d be there.) That along with not finding a church where when you walk in the door it says “YOUR HOME” became very depressing for me. I really began to sink deep in a depression, and  then I found out I was pregnant again. This time with number five and it cheered me right up!! For a while anyway.

I started longing for my DH to say to me..Pack up..we are moving home..

 

Instead….DH would spend time outside on the deck, in what I witnessed as pure awwwwe. He loved it here and made sure I knew it each and every day. He would carry on about how great his job is and how much he loved the drive home from work, even though is it a good 35 minutes.

 

I  started verbalizing how unhappy I was down here, and my sour expression each day sure was a clue.

 

I started breaking down in tears almost nightly and telling DH that I need Jesus to rapture me up soon, because I’d rather be in heaven then live this misery of a life.

 

I felt I was just going through the motions of life, and I wasn’t finding any joy in anything I did. I abandoned all my hobbies and really felt like a sinking ship!
